Juicing Science – Juicer vs Blender
great video. thank you for making it. eating whole foods is always best I say but making smoothies and juice is also a great way to start getting in tones of veggies and fruits into everyone's diet.
Truth is, both techniques provide more than enough nutrients if used regularly. To say that air is not introduced into the juice from a centrifugal juicer is disingenuous. Just look at the juice when you are done juicing. It is full of air bubbles. The key is to drink whatever you make as quickly as possible, allow sufficient time to mix with the enzymes in the saliva to activate some nutrients. You may add some lemon to counter at least some of the oxidation if it concerns you.
Your body will filter out excess nutrients via the kidneys and the urine excretion–fat soluble vitamins will be stored and used as needed, and elemental minerals are not generally affected by either technique as long as the heat levels are low (not boiling).
Recent research into our gut bacteria have revealed the importance of insoluble fiber (which we cannot digest) to the health of beneficial bacteria–which can use such fiber and produces fatty acids as a bi-product that are critical to our health. So fiber is good–and good for us.
My take away lesson is to have a little of each in your diet. You will gain the advantages of both juice and smoothies.
I'm sure, as to not to discredit a guy with a PhD, that the last time I checked, most juices don't have great amounts of fiber, which I'm sure you'd get from a blender. And last time I checked, fiber is something most Americans don't get enough of, regardless of statistics and "research from labs".
